Saccharomyces (pro: sac-ar-o-my-sees) is the genus of fungi that includes multiple species of yeast. This amazing single celled organism is the unsung hero of fermentation. Without it, booze would not exist. What a different world. All thanks to a single celled organism. Tiny, and non-descript Saccharomyces has the power to transform something pedestrian into something extraordinary. That is some big shoes to fill. And that is what we at Saccharomyces Beer Café and Bottle Shop strive for. We are small and independent, so we support the small and independent makers of good booze.
